Assam Wild Pepper is a rare and aromatic gourmet pepper from Assam in northern India. Grown wild and hand-harvested in the Brahmaputra Valley between Bhutan and Bangladesh, this pepper is carefully sun-dried to preserve its distinctive flavour and natural character.
Its unusual berry-like shape has earned it the nickname “the truffle of pepper”. The flavour is elegant, earthy and complex, with notes that recall forest floor, mushrooms, light smoke, camphor and a subtle menthol freshness. The heat is mild rather than aggressive, leaving a gentle tingling sensation in the mouth.
This is a beautiful finishing pepper for dishes where aroma matters as much as spice. Use it with game, red meat, charcuterie, risotto, scallops, oysters, cod brandade, slow-cooked stews, tomato salad, gazpacho, parsnip purée, mushroom dishes and chestnut-based recipes. For a more creative pairing, try it with poached pears, crème brûlée or chestnut cream.
