Description
Chipotle Pepper is one of the most flavourful chilli spices in Mexican cuisine. It is made from fully ripened Jalapeño peppers that are slowly dried and smoked, creating a rich, deep and complex spice with moderate heat and beautiful smoky aromas.
Unlike simple hot chilli powders, chipotle brings much more than spice. Its flavour is warm, rounded and aromatic, with notes of dried fruit, fig, raisin, cocoa, burnt wood and smoke. This makes it ideal for dishes where you want depth, warmth and a subtle smoky character.
Use it to season BBQ meats, grilled chicken, pulled pork, prawns, fish, roasted vegetables, beans, tacos, chilli con carne, tomato sauces, dips, marinades and spice rubs. It also works beautifully in Mediterranean-style cooking with olive oil, tomatoes, fresh cheese, tapas, chorizo and roasted peppers.
For something more creative, add a small amount to dark chocolate desserts, pralines or cocktail syrups for a warm smoky finish.

How to Use
Start with a small amount and adjust to taste. Chipotle Pepper has a medium heat level, but its smoky flavour is intense and aromatic. Add it to dry rubs, marinades, tomato sauces, chilli dishes, guacamole, hummus, roasted vegetables or grilled meat.
For a quick BBQ marinade, mix chipotle pepper with olive oil, garlic, lemon juice, honey, salt and smoked paprika.
